Postings

I know that I haven't posted in forever. I do have some pictures I want to post up of the strawberry apple crumble tart things I made for Easter breakfast. They turned out beautifully and everyone loved them.

The thing is, I'll probably keep baking bread for the bf but I wont be baking as much as I'd like to.

The problem is that I can't eat gluten anymore. That's right, the girl who loves to bake can't even eat most of the stuff she makes.

I did bake a chocolate cake and put strawberries on it last Saturday for a party. I used Gluten Free Pantry's cake mix and added 1/3 cup chocolate and some chocolate chips to the mix. It turned out really yummy. I"m still having a little trouble with home made icing. It comes out pretty thin, but maybe I'm just not letting it sit long enough in the fridge. I'm always doing these things last minute. My icing also had chunks of powdered sugar in it on this last cake.

What I plan on doing is ordering some gluten free baking supplies from the internet from either Bob's Red Mill or Kinnikinnick. I've heard good things about both of their gluten free lines. I use Bob's Red Mill now for wheat based baked goods.

One thing I know I'm going to really need for baking gluten free is xantham gum or guar gum. From what I've read xantham gum and guar gum are equally exchangeable. Xantham gum runs about 13 dollars a bag at the local health food store, and I saw that guar gum is considerably cheaper online (since I can't find it here). The only difference is some people experience laxative properties in the guar gum if they eat a lot of it. I think I can get away with guar gum though because it's only a teaspoon usually.

If any of you out there have some delicious gluten free recipes you'd like to share please do. I may eventually want to try making some gluten free bread, but I'm trying to live without bread. Somewhat easier and cheaper to do without, I suspect.

I do miss posting here more.

Oh, man, that's a tough one. I do have some recipes way back in the deepest darkest depths of my box from an elimination diet we did with one of our kids. That was the toughest one for me...gluten. NO, I take it back, it was wheat. I'm really not sure I could live without it. Yikes, that's scary!

Actually, it's so funny you post today -- I am in the process of booking my honeymoon - and we're going to go to Maui and Kauai!!! Any suggestions for me? We can't spend a fortune - but I was looking at the Fairmont and Westin on Maui - looked nice, my parents suggested it.... And I would LOOOVE to get some recommendations about places to eat there that are gluten-free friendly!
